Nothing reminds me more of my childhood than a bowl of Tomato Soup and a yummy grilled cheese sandwich. And nothing screams cooler weather like a hot bowl of soup. Tomato Soup is a comfort food on a cool Fall day. This is a homemade soup recipe that will take about 30 minutes to make. All the ingredients are simple and can be found at most local grocery stores.

This will definitely be a crowd pleaser and you’ll love the simplicity of it and that it doesn’t require a lot of ingredients or effort to make it! This recipe will serve a family of four, but you can double the recipe to serve more.

Ingredient Notes and Substitutions
Butter – use unsalted butter to have more control of the amount of salt in the soup. I have found that tomatoes have a lot of acidity and can be salty on their own.
All-purpose flour – If you are on a special diet, such as gluten free, you replace with your favorite gluten free flour. Just make sure you’re using all-purpose.
Canned tomatoes – This saves time instead of using fresh tomatoes. You would have to remove the peeling from the fresh tomatoes and also cook the soup much longer before blending the soup.
Tomato paste – This gives the soup a better taste, in my opinion. I wouldn’t recommend using tomato sauce.
Stock – I prefer using chicken stock to make this soup, but you can use vegetable stock.
Seasoning – Trust me when I say that a little sugar added makes a difference in this soup. Because of the acidity of the tomatoes the sugar helps balance that out. Then just add salt, pepper, dried basil as well as a little fresh basil. You may also choose to use fresh thyme, but I prefer basil instead. Basil is a fragrant herb and brings out the flavor in this soup.

STEP-BY-STEP INSTRUCTIONS
Melt the butter and olive oil in a preheated Dutch oven or large stock pot over medium-high heat.

Sauté the vegetables & add the stock. onions and butter until the onions become translucent. Then, add the garlic, cooking until fragrant, but be careful not to burn. Sprinkle the flour over the onion and mix until the onions are completely coated in the flour.



Slowly start pouring the stock while stirring the onions. Keep stirring and pouring as it mixes. Add the entire can of whole tomatoes (DO NOT DRAIN) and tomato paste. Stir.



Add the remaining seasonings. Add in the fresh basil. Lower heat to medium-low and let the soup cook for about 10-15 minutes. Stirring occasionally.


To blend the soup, use an immersion blender, like this one here or you can transfer to a food processer. Blend until smooth.
Homemade Tomato Basil Soup
INGREDIENTS
• 6 tbsp unsalted butter
• 2 tbsp olive oil
• 1 onion, diced
• 1 large garlic clove, or 1 tbsp minced garlic
• 2 tbsp all-purpose flour
• 1-1/2 cups chicken or vegetable stock
• 28 oz canned whole tomatoes
• 2 tbsp tomato paste
• 1 tsp white granulated sugar
• 1 tsp dried basil
• 1/2 tsp black pepper
• 1 tsp salt (more or less to taste)
• 1 to 2 tsp fresh basil, finely chopped (more or less to taste)
DIRECTIONS
1. Preheat a Dutch oven or stock pot over medium-high heat. Add 2 tbsp of butter and olive oil.
2. Once the butter is melted, add diced onion and garlic. Sauté until softened.
3. Sprinkle the flour over the onion and garlic. Mix until the onions are fully coated in the flour.
4. While slowly stirring the onions, pour in the stock. Keep stirring and pouring until mixed thoroughly.
5. Add the entire can of whole tomatoes (do not drain) and tomato paste. Stir well. Add remaining seasonings and butter.
6. Lower heat to medium-low heat and let the soup cook for about 10-15 minutes. Stirring occasionally.
7. Use an immersion blender to blend soup until smooth. Add the remaining 4 tbsp of butter.
8. Stir in fresh basil.
9. Serve with an extra cheesy grilled cheese sandwich. Garnish with more basil and ENJOY!
